Here’s a guide to help Canadians make the most of their freezers, save money, and reduce waste.

Know Your Freezer’s Temperature and Capacity

The ideal freezer temperature is -18°C (0°F). At this temperature, bacterial growth stops, and food can be stored safely for long periods without losing quality. Check the temperature regularly with a freezer thermometer—especially if your freezer is in a garage or basement, where temperatures can fluctuate.

Don’t overfill your freezer, but don’t leave it too empty either. A full freezer retains cold better, but there should still be enough space for air to circulate. If you have a chest freezer, use baskets or bins to keep things organized and easy to find.

Package Food Properly

Air is the enemy when it comes to freezing. The less air around your food, the better it will taste and the longer it will last. Use freezer bags, airtight containers, or vacuum-sealed bags, and press out as much air as possible before sealing.

  • Meat and fish should be tightly wrapped and clearly labelled with the date and contents.
  • Bread and baked goods can be stored in freezer bags with parchment paper between slices or pieces to prevent sticking.
  • Vegetables should be blanched (briefly boiled) before freezing to preserve colour, texture, and nutrients.
  • Cooked meals and leftovers should be completely cooled before freezing—otherwise, they can raise the freezer’s temperature and affect other items.

A handy tip: freeze food in flat portions. It saves space, stacks easily, and thaws faster.

Label Everything and Track Dates

It’s easy to forget what’s in your freezer, so labelling is essential. Write both the contents and the date on each package using a permanent marker. This helps you avoid throwing out food simply because you can’t identify it.

As a general guideline:

  • Meat and fish: 6–12 months
  • Bread and baked goods: 3–6 months
  • Fruits and vegetables: 8–12 months
  • Cooked meals: 3–6 months

While food can often last longer, flavour and texture may decline over time.

Prevent Freezer Burn

Freezer burn happens when food is exposed to air or temperature changes. It appears as greyish or white patches and means the food has dried out. It’s still safe to eat, but the taste and texture may be affected.

To prevent freezer burn:

  • Use airtight packaging.
  • Avoid opening the freezer unnecessarily.
  • Keep the temperature consistent.
  • Use older items before newer ones.

Freeze Smart and Save Energy

Freezers use a lot of electricity, but you can reduce energy consumption with a few simple habits:

  • Defrost regularly – even a thin layer of frost can increase energy use.
  • Keep it reasonably full – fill empty spaces with bags of rice, bread, or even ice packs to help maintain temperature.

If your freezer has a “fast freeze” or “super freeze” function, use it when adding large amounts of fresh food. It helps the temperature drop quickly and protects the rest of your frozen items.

Thawing – The Overlooked Step

How you thaw food matters for both taste and safety. The best method is to let food thaw slowly in the refrigerator. It takes longer but keeps food at a safe temperature and prevents bacterial growth.

If you’re short on time, use your microwave’s defrost setting or place the food (sealed in a watertight bag) in cold water. Avoid thawing food at room temperature—especially meat, poultry, and fish.

Once food has thawed, don’t refreeze it unless it has been cooked first.
